Even though Lordaeron was known for it's religious fanaticism, Stormwind was the one who had the Tome of Divinity. It was more religiously enlightened than the people up North. It prided itself with it's impenetrable walls, strong army, allies including the most powerful mage Medivh, and a rich and fertile land. Lothar, Medivh, and Llane where all pretty important figures as well. Llane was doing the whole ruling with wisdom and justice thing before Ned Stark or Terenas. It was the cream of the crop of all human nations. It's people descended from the Arathi, which started human civilization and it's cities and technology supposedly was the mightiest and looked the richest. Khadgar thought that Stormwind houses were made out of gems when he first saw them.

Also what's wrong with the lion's head? It's the most ferocious part of the animal, the part of the animal that is the first and last thing you see when it goes for your jugular and bites your face off. So what if it's generic, humans are a generic race. Sure the lions playing patty cake may be more historically acurate but having the lion's head on a shield I think is more intimidating. Though I do wish perhaps that the insignia was made more ferocious; like maybe have it bear its teeth or something.
